Bastard Halibut

Hi everyone. Today’s dish is Bastard halibut. This fish is called “ひらめ” in Japanese. Even in Chinese characters, it is called Hirame in flat in the fish section.  This fish is very delicious because they eat a lot of food to lay eggs from spring to summer. Bastard halibut tastes good over 50 centimeters. It is about one kilogram. Today, I will introduce two ways to eat Bastard halibut sashimi. The first is Sashimi. This fish is not greasy and tastes good. This fish is better suited for eating the original taste than for seasoned dishes. I tried arranging this sashimi in a flower shape. Soy sauce goes well with this sashimi. The second is Engawa Sashimi. Do you know what Engawa is? It is a muscle that moves the fins. Cutlass fish dish

 Hi everyone. Today's fish is Cutlass fish. Cutlass fish is called “tathiuo” in Japanese. The reason I recommend this fish is because it is more delicious than other white fish. Chopped Horse Mackerel with Miso

Hi! Everyone.  Thank you for viewing my blog.   I will introduce delicious fish dishes from cooking. The first dish is chopped horse mackerel with miso.   All the fish I'm going to introduce were caught in Enoshima.  And it's a dish I made. Understand this about me : I can handle fish. There are three horse mackerels used in today’s dish.   These fish can be caught all year round, but  they are especially delicious in summer.  First, remove the fish's head and the internal organs and wash thoroughly. Next, cut the fish into three pieces and remove the center bone.  If you handle it slowly, the fish will warm up and the freshness will decrease, so it is important to handle it quickly.  If you put too much effort into it at this time, you may cut your hand, so please be careful!
